It is slightly viscous in appearance, with a beautiful medium-deep golden yellow colour. On the nose, it is reminiscent of tomato leaves, gooseberries, green peppers and dried herbs, not much different from its big brother - sauvignon. Very dry, sparkly and lively on the palate, with plenty of aromatic charge and freshness.
Late harvest, starting fermentation in large tanks with natural yeasts. Quiet fermentation finishes in wooden barrels (3000l ), where the wine is matured to completion on its own lees, without any flows. No sulphur or other preservative is ever used until bottling, so that the wine completes all its natural processes and becomes naturally stable, ready to last one lifetime.
