Sauvignon
Our Sauvignon grows at the highest point of our vineyards, where it basks in the sun all day long. The wine is straw-yellow with green nuances and a rich aromatic bouquet that starts with elderflowers and then moves on to a wide range of spices (basil, tomato leaf, pepper, nutmeg ...). On the palate, the wine is full-bodied and rich, with a harmonious balance between alcohols and acids and a long lingering finish. The wine was cold macerated for 24 hours and then transferred to inox tanks where it underwent fermentation (approx. 30 days at 18°C). Before coming to the market, the wine was left in the bottle for at least 3 months.
