Pinot Grigio Ambra
The colour, which reflects 10 days of contact with the grape skin, is dramatic, slightly opaque, somewhere between a darker gold and amber.The wine is initially fragrant, almost fruity, with a slight hint of balsamic notes, which can otherwise quickly dominate with longer macerations of white wines. In the background there are notes of dried figs, coffee, caramel. On the palate it is dry, medium-bodied, with a heroic measure of lively acids and a slight tannic grip. The texture is supple, buttery and the aftertaste is longer.
Late harvest, with the start of fermentation in large tanks with natural yeasts. Maceration for 10 days in fermentation, then draining off the liquid part without pressing the pomace. Quiet fermentation finishes in wooden barriques, where the wine is matured to completion on its own lees, without any flows. In this way, the wine completes all its natural processes and becomes naturally stable, ready to last one lifetime.
Aged for 18 months in 225 l French oak.
