The colour is quite deep and golden, indicating maturation and evolution. Although the primary aromas have given way to notes of flowers, dandelion honey, raisins and pine resin, the bouquet is unmistakably reminiscent of Pinot Gris. It is true, it takes a few minutes to get through all the layers of aromas and for the flower to fully open and develop. Dry on the palate, with wonderful complexity and depth of character, a hint of tannins and a very long finish.
Late harvest, with the start of fermentation in large tanks with natural yeasts. The silent fermentation ends in wooden barriques, where the wine is matured on its own sediment, without any flow. In this way, the wine completes all its natural processes and becomes naturally stable, ready to last one lifetime.
Aged for 2 years in 225 l French oak.
