Rebula Journey

A complex, full-bodied rebula that combines the qualities of a fresh, simple fruity rebula with the fullness, richness, minerality, saltiness of a macerated rebula. Colour: Delicate yellow with green tints. Nose: Fruity, floral, white flowers of black thorn giving way to a white melon scent. Flavour: Full, rich, fresh, with a nice acidity that accentuates the minerality and saltiness. The aftertaste is persistent, fruity and long. Recommended dishes: Fish carpaccio, mussels on bouzoura, oysters, pasta with delicate sauces. Vinification for Rebula Journey is done in two ways, half of the grapes are gently pressed, the must is cooled to 8 0C in a stainless steel tank. After 2 days, racking, addition of selected yeasts, fermentation at controlled temperature up to 16 0C. The rest of the grapes are cold macerated for 48 hours, then gently pressed and fermented separately at a higher temperature (18 0C). Maturation/fermentation: First racking after the end of fermentation, maturation on fine lees until April. In this month, the two ribs are combined. In May, the Journey Rebula is bottled

The Simčič family's wine tradition dates back to 1812. Over the decades, the link with the vine and the wine was strengthened, and in the 1990s, Miro Simčič built on the foundations of family knowledge and work to establish today's Medot brand.
