The Carolina Red is a medium garnet red colour. It has an elegant, ripe nose with a characteristic scent of cherries and cherry jam. On the palate, the wine is dry, tasty, with fine, ripe tannins. The wine is powerful, with flavours of pepper, exotic spices and chocolate. A very complex wine with a long flavour and a long life.
The grapes have been macerated for one month, then the wine is matured for 24 months in 225 litre barrels at constant temperature and humidity. We use 50% Slavonian oak, 47% French Allier oak and 3% French Troncaise oak.
The winemaking tradition of the Jakončič family farm dates back to 1847, when Mihael and Carolina Jakončič took over the first vineyards in the village of Kozana in Goriška Brda, thus laying the foundation for the family winery. The commitment to quality grape and wine production on the Jakončič farm was, and still is, of primary importance. Only this type of cultivation, combined with the specific vineyard vines, can be the basis for the production of extract-rich, mineral-rich and structured wines.
