Is the ribwort yellow? Maybe as a grape, but that is why the 'M', macerated rebula, is the colour of old gold, actually liquefied amber. Its droplets slowly creep down the side of the glass, heralding a wine of rich body. The bouquet is surprisingly fresh, with spring flowers, fruit and citrus complemented by balsamic notes with hints of vanilla, nuts and cinnamon. On the palate, the expectations of a rich wine with a fruity-balsamic character are fully realised, complemented by perceptions of smooth tannins and a pleasant minerality. The acidity and the tannins predict the wine's longevity, while the moderate alcohol level increases its drinkability. The aftertaste is long and layered, with notes of both brioche pear cherries and sun-dried figs, with the reward of a lingering memory of slightly smoky fruit creeping in from the background. Rebula 'M' can be an exceptional aperitif wine, suitable to accompany ham, bacon, herb marinated trout, smoked salmon, full-fat cheeses, vegetables in tempura and other savoury frying, including calamari, prawns and guanciale. Later in the meal, it goes well with oily freshwater and sea fish, suckling pig and spit-roasted lamb, poultry in various ways, especially with the slightly more exposed herbs and spices.
